  • 3/4 cup Salted butter softened
  • 4 ounces Cream cheese softened
  • 1.5 cups Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1.75 teaspoons Almond extract
  • 3 cups All-purpose flour spooned and leveled
  • 1 teaspoon Kosher salt
  • 1 teaspoon Cornstarch

For the Frosting

  • 12 ounces Cream cheese softened
  • 1/4 cup Butter softened
  • 1.5 teaspoons Vanilla extract
  • 1 teaspoon Lemon juice
  • 1.5 cups Powdered sugar
  • 1/4 teaspoon Kosher salt

For the Toppings

  • 1 can Mandarin oranges 11 ounces, drained
  • 2 cups Strawberries sliced
  • 2 cups Blueberries
  • 1 cup Raspberries
  • 4 Kiwi peeled and sliced
  • 2 tablespoons Apricot jam or preserves

Preparation

  • Cream the Butter: In a large bowl or stand mixer, beat softened butter until it’s lighter in color and fluffy, about 1-2 minutes.
  • Add Cream Cheese: Mix in softened cream cheese, continuing to beat for 1 minute until everything is well incorporated.
  • Incorporate Sugar: Add granulated sugar and beat well for 1-2 minutes until the mixture becomes fluffy.
  • Mix in Egg and Extracts: Add large egg, vanilla, and almond extract. Beat until well mixed, scraping down the sides as needed.
  • Add Flour Mixture: Spoon flour into measuring cup and add it to the bowl without mixing just yet.
  • Combine Dry Ingredients: Toss in kosher salt and cornstarch to the flour, then stir to combine before mixing until just barely combined.
  • Prepare Pizza Pan: Line a 12-inch pizza pan with parchment paper.
  • Shape the Dough: Scoop the dough onto the parchment paper and press it out to the edges until it's about 3/8 inch thick.
  • Chill the Dough: Refrigerate the pan for 30-45 minutes.
  • Preheat Oven: During the chilling time, preheat your oven to 350°F for at least 15 minutes.
  • Bake the Crust: Bake the chilled dough for about 20-23 minutes until it has a very light golden color.
  • Cool the Crust: Let the crust cool completely in the pan before frosting.
  • Make the Frosting: In a bowl, beat together cream cheese and softened butter until it’s smooth and creamy.
  • Flavor the Frosting: Add vanilla and lemon juice, mixing well.
  • Sweeten the Frosting: Gradually mix in powdered sugar and kosher salt until the frosting is smooth.
  • Frost the Crust: Spread the creamy frosting evenly over the cooled crust, then refrigerate it.
  • Prepare the Fruit: Drain mandarin oranges, slice strawberries, and peel/slice kiwi.
  • Arrange Toppings: Artfully arrange your fresh fruit on top of the frosting.
  • Make the Glaze: Heat apricot jam in the microwave until it’s thin and drippy.
  • Brush the Fruit: Use a pastry brush to lightly coat the fruit with the glaze.
