For the Chicken

  • 1.5 pounds fresh chicken breast Sliced in half for faster marination and cooking.
  • 3 tbsp lemon juice Brightens the dish.

  • 2 tbsp oregano Fresh or dried.

  • 0.25 small red onion Diced.

For the Dressing

  • 1 tsp oregano Dried.

  • 2 cups white rice Cooked.

Cooking Instructions

  • Marinate the Chicken: In a ziplock bag, combine chicken with lemon juice, white wine vinegar, oregano, garlic powder, thyme, salt, and pepper. Refrigerate for at least 30 minutes or up to 8 hours.
  • Cook the Chicken: Heat a skillet over medium heat with 1 tsp olive oil. Remove chicken from marinade, pat dry, and cook for 4-5 minutes on each side until golden brown and 165°F internal temp.
  • Prepare the Salad: In a bowl, add cucumber, tomatoes, olives, and red onion. Mix well.
  • Assemble the Bowls: For immediate serving, place 1/2 cup rice in a bowl, top with 3/4 cup salad and 4 ounces sliced chicken. Add extra feta if desired.
  • Store for Meal Prep: Keep chicken and rice together and store salad separately to maintain freshness.
