Ingredients

  • 2 tablespoons Lemon Juice Consider lime juice for variety.
  • 2 cloves Garlic Minced; garlic powder can be used.
  • 1 teaspoon Oregano Fresh or dried can be used.

For the Base

  • 1 cup Rice or Quinoa Can use cauliflower rice for low-carb.

For the Tzatziki

  • 1 cup Greek Yogurt Plant-based yogurt for dairy-free.
  • 1 medium Cucumber Seedless is preferred.
  • 1 tablespoon Dill Fresh or dried based on availability.
  • 1 clove Additional Garlic Adjust according to taste.
  • 1 tablespoon Lemon Juice Essential for balance.

For the Vegetables

  • 2 cups Mixed Vegetables (Tomatoes, Cucumber, Bell Peppers, etc.) Customizable based on preference.

Preparation Steps

  • Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
  • Marinate the Chicken: Pound the chicken to about 1/2 inch thickness, place in the marinade, and let it soak for at least 30 minutes.
  • Mix the Tzatziki: Combine Greek yogurt, grated cucumber, dill, minced garlic, and lemon juice in a separate bowl and chill.
  • Cook the Rice or Quinoa: Prepare according to package instructions.
  • Air Fry or Sauté the Chicken: Air fry at 380°F for 7 minutes, then flip and cook for an additional 3-4 minutes.
  • Rest and Slice the Chicken: Allow to rest for 5 minutes before slicing.
  • Assemble Your Bowls: Start with rice or quinoa, add veggies, top with chicken and tzatziki, drizzle with olive oil and lemon juice.
