How to Make Healthy Sesame Chicken

  • Cut your chicken breasts into 1-inch cubes. As you do this, start cooking 1 cup of rice and 2 cups of green beans according to package instructions; they will complement your dish perfectly.
  • In a large pan, heat 1/2 tablespoon of avocado oil over medium-high heat. You want the oil shimmering, indicating it’s ready for sautéing.
  • Add the cubed chicken to the pan. Sauté until the chicken is browned and cooked through, approximately 10-12 minutes. The chicken should be golden and juicy.
  • While the chicken cooks, whisk together 1/4 cup coconut aminos, 1 tablespoon honey, 1 tablespoon toasted sesame oil, 1/2 teaspoon ground ginger, 1 tablespoon minced garlic, 2 tablespoons rice vinegar, 1/4 teaspoon black pepper, 1 teaspoon lime zest, and 1 tablespoon lime juice in a bowl until combined.
  • Once the chicken is fully cooked, set it aside. Pour the sauce mixture into the same pan and stir consistently over medium-high heat. Cook for 3-5 minutes, or until the sauce becomes bubbling and thickened.
  • Return the sautéed chicken to the pan, stirring well to coat it in the luscious sauce. Let it simmer for a minute to absorb all the flavors.
