Ingredients
  

For the Kebab Mixture

  • 2 tbsp Rapeseed oil or substitute with olive oil
  • 400 g Lean lamb mince or use chicken or turkey
  • 2 cloves Garlic crushed
  • 1 tsp Ground cumin or substitute with ground coriander
  • 1 tsp Ground coriander
  • 0.5 tsp Onion powder or finely chopped fresh onions
  • 0.5 tsp Smoked paprika or sweet paprika
  • 0.5 tsp Sea salt adjust to taste
  • 0.5 tsp Black pepper freshly ground recommended

For Serving

  • 4 pieces Brown pittas or whole wheat pittas
  • 0.25 head Iceberg lettuce finely shredded
  • 0.5 head Red cabbage cored and finely shredded
  • 0.5 pieces Red onion thinly sliced
  • 1 piece Red pepper sliced
  • 2 tbsp Chilli sauce adjust based on heat preference
  • 4 tbsp Low-fat plain yoghurt Greek yogurt is thicker alternative
  • 2 tbsp Pickled chillies optional

Instructions
 

Preparation

  • Preheat the Oven to 200°C (180°C Fan/Gas 6).
  • In a mixing bowl, combine the lamb mince, crushed garlic, spices, and sea salt. Mix until well blended.
  • Press the mixture into a lightly oiled 1kg loaf tin.
  • Place the loaf tin in the preheated oven and bake for 20 minutes.
  • Remove from the oven, cool for a few minutes, then slice into thin strips.
  • Warm the brown pittas in the oven for about 5 minutes.
  • Fill each pitta with kebab strips, add lettuce, cabbage, onion, red pepper, drizzle with chilli sauce and yoghurt. Top with pickled chillies if desired.

Notes

For a vibrant touch, consider adding fresh herbs or customizing toppings like feta or olives.
