How to Make Irish Potatoes

  • In a mixing bowl, combine the softened cream cheese and powdered sugar. Blend until smooth and creamy, ensuring that there are no lumps—this should take about 2-3 minutes.
  • Add the shredded coconut to the cream cheese mixture. Stir thoroughly until everything is well combined, creating a cohesive batter filled with delicious coconut.
  • Using your hands, roll the mixture into small, oval-shaped pieces to mimic potatoes. Aim for bite-sized pieces, about 1 inch long, for the best presentation.
  • Place ground cinnamon on a plate and gently roll each piece in it to coat them lightly, adding warmth and depth of flavor.
  • Refrigerate the shaped candies for about 30 minutes to allow them to set, helping them firm up and enhancing their texture before serving.
  • For a festive touch, roll the candies in additional shredded coconut for extra flavor and visual appeal.
