  • 0.5 cups uncooked farfalle pasta
  • 1 dash salt for boiling water

For the Vegetables

  • 0.25 cups fresh peas frozen peas work too
  • 1 medium carrot diced
  • 1 medium cucumber peeled and diced
  • 1 medium red bell pepper diced
  • 0.25 cups steamed corn kernels

For the Dressing

  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons lemon juice optional

Directions

  • Start by bringing a pot of salted water to a boil. Add the uncooked farfalle pasta and cook for about 10 minutes, or until tender.
  • Once cooked, drain the pasta in a colander and let it cool slightly while you prepare the veggies.
  • In a large mixing bowl, combine the cooled pasta with the fresh peas, diced carrot, cucumber, red bell pepper, and steamed corn kernels.
  • Drizzle the olive oil over the salad mixture, and if desired, add sliced lemon juice. Toss gently until well combined.
  • This kid friendly pasta salad can be served immediately at room temperature or chilled in the fridge.
