How to Make Limoncello

  • Peel the lemons: Begin by carefully peeling the lemons, removing just the zest and avoiding the white pith. Place the peels in a large airtight container.
  • Combine with alcohol: Pour the vodka or grain alcohol over the lemon peels in the container. Seal it tightly and let the mixture steep in a cool, dark place for 2-4 weeks, gently shaking the container every few days.
  • Prepare simple syrup: In a medium saucepan, combine the water and sugar. Simmer over medium heat until the sugar dissolves. Allow to cool to room temperature.
  • Strain the mixture: Once steeping is complete, remove lemon peels from alcohol and pour the infused alcohol through a fine mesh strainer.
  • Mix and bottle: Combine the strained alcohol with the cooled simple syrup. Pour into clean bottles, seal tightly, and store in the freezer.
