Preparation

  • Preheat the oven to 450°F. Line a rimmed baking dish with foil and grease it lightly. Arrange the chicken breasts inside, spraying them with avocado oil, then season with salt and pepper. Bake for about 20 minutes, until the chicken is fully cooked.
  • Prepare a 2-quart casserole dish by greasing it. In a large bowl, combine mayonnaise, sour cream, Dijon mustard, minced garlic, and the seasonings: salt, pepper, thyme, paprika, cayenne, and ½ cup of shredded cheddar. Mix until smooth and creamy.
  • Cube or shred the baked chicken after letting it cool slightly. Toss the chicken pieces in the bowl with the creamy mixture to coat every piece deliciously.
  • Transfer the chicken mixture into the greased casserole dish. Top with the remaining ½ cup of shredded cheddar. Bake again for about 10 minutes, until the cheese is melted and bubbly.
