For the Base

  • 2 tbsp Avocado Oil Ideal for sautéing
  • 1 medium Onion Diced
  • 2 medium Carrots Sliced
  • 6 cloves Garlic Minced
  • 1 lb Ground Beef Opt for 85/15 or 90/10

For the Broth

  • 4 large Tomatoes Diced
  • 5 cups Chicken Broth Or vegetable broth
  • 1.5 tbsp Italian Seasoning
  • 0.5 tsp Black Pepper Adjust to taste
  • 2 Bay Leaves Remove before serving

For the Veggies

  • 1 head Cabbage Chopped into 1-inch pieces
  • Sea Salt To taste

Preparation

  • Dice the onion and tomatoes, slice the carrots into thin rounds, mince the garlic, and chop the cabbage into 1-inch pieces.
  • Heat avocado oil in a large pot over medium heat, add onions and carrots, cooking until onions are translucent (about 2-3 minutes). Stir in minced garlic.
  • Increase heat to medium-high, add ground beef, and cook until browned (about 5-6 minutes).
  • Combine diced tomatoes, chicken broth, Italian seasoning, black pepper, and bay leaves. Bring to a boil.
  • Reduce heat to medium-low, add chopped cabbage, cover, and simmer for 30 minutes, stirring halfway.
  • Remove bay leaves, adjust salt if needed, serve hot.

Notes

Store leftovers in an airtight container for up to 5 days. This soup also freezes well for up to 3 months.
