Preparation

  • In a mixing bowl, beat together the peanut butter, maple syrup, powdered sugar, almond flour, vanilla extract, and a pinch of salt until creamy.
  • Portion the filling into 2-tablespoon portions, roll into a ball and shape into an oval.
  • Place the shaped eggs on a lined baking sheet and freeze while preparing chocolate.
  • Whisk cocoa powder and water in a small bowl, and set aside.
  • Melt white chocolate wafers and coconut oil in a microwave-safe bowl, stirring every 15-20 seconds until smooth.
  • Dip each egg in melted chocolate, let excess drip off, then return to parchment paper.
  • Use a pastry brush to flick the cocoa mixture over the eggs for speckles.
  • Refrigerate until chocolate is set, about 10 minutes. Enjoy your festive treat!
