Ingredients
  

For the Steak

  • 1 pound sirloin steak about 1-inch thick for juicy flavor
  • 2 tablespoons olive oil extra virgin for flavor boost
  • 3 cloves garlic minced; fresh is best
  • 2 tablespoons lemon juice fresh juice preferred
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste black pepper

For the Base

  • 2 cups cooked grains brown rice, quinoa, or cauliflower rice
  • 1 cup roasted chickpeas optional

For the Toppings

  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1 medium red onion
  • 1/2 cup kalamata olives or green olives
  • 1/2 cup feta cheese optional
  • 1/4 cup fresh herbs parsley or dill

For the Tzatziki Sauce

  • 1 cup Greek yogurt or coconut yogurt for dairy-free
  • 1/2 cup grated cucumber squeeze out excess moisture

For the Vinaigrette

  • 1 tablespoon honey optional for Whole30
  • 2 tablespoons mixed seasonings olive oil, lemon juice, and garlic combined

Instructions
 

Preparation

  • Prepare the Marinade: In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, dried thyme, salt, and pepper. Mix well and coat the sirloin steak completely. Allow it to marinate for 30 minutes to 4 hours in the fridge.
  • Make the Tzatziki Sauce: In another bowl, mix Greek yogurt, grated cucumber, lemon juice, minced garlic, dill, salt, and pepper. Stir until combined and refrigerate for at least 15 minutes.
  • Whisk the Vinaigrette: In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, dried oregano, salt, and pepper until smooth.
  • Cook the Steak: Heat a cast-iron skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side until desired doneness.
  • Assemble the Bowl: In serving bowls, layer cooked grains, sliced steak, cherry tomatoes, cucumber, red onion, and any additional toppings. Drizzle with tzatziki and vinaigrette.
