Preparation Steps

  • Preheat your oven to 350°F. Line the bottom of an 8x8" pan with parchment paper, allowing it to extend up the sides for easy removal.
  • In a food processor, whirl together the flour, sugar, and butter until well combined. Press the mixture firmly into the prepared pan. Bake for 15 minutes until slightly golden.
  • While the crust bakes, whisk together the eggs, sugar, flour, and salt in a bowl for about one minute. Stir in the diced rhubarb, ensuring even distribution.
