Steps to Make Rhubarb Bars

  • Preheat the oven to 350°F. Line the bottom of an 8x8" pan with parchment paper, letting it hang over the sides for easy lifting later.
  • Blend the crust ingredients. In a food processor, combine 1 cup of flour, 1/2 cup of sugar, and 1/2 cup of room temperature butter. Pulse until crumbly, then press firmly into the bottom of the prepared pan. Bake for 15 minutes.
  • Mix the filling ingredients. While your crust is baking, in a bowl, whisk together 2 large eggs, 1 cup of sugar, 1/4 cup of flour, and 1/4 teaspoon of salt until just blended. Fold in the 2 cups of diced rhubarb gently.
  • Pour the filling over the hot crust. Carefully spread it out to ensure an even layer and return it to the oven. Bake for an additional 40-45 minutes, until the filling is set.
  • Cool the bars on a wire rack before serving. Once completely cool, use the parchment paper to lift them out of the pan and cut into squares.
