  • Chop about 3 stalks of fresh rhubarb, measuring out to 2 cups. Set aside.
  • Cream the softened butter and granulated sugar together in a stand mixer until smooth and fluffy, about 2-3 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then pour in the vanilla extract.
