For the Cake

  • 0.25 Cup salted butter softened
  • 0.5 Cup brown sugar
  • 0.25 Cup granulated sugar
  • 1 large egg
  • 0.5 Cup buttermilk
  • 1 teaspoon vanilla
  • 1 Cup all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 Cup chopped rhubarb

For the Topping

  • 0.25 Cup granulated sugar
  • 0.5 teaspoon cinnamon

Preparation

  • Preheat your oven to 350°F, and grease a 9x9 baking pan.
  • Cream together the softened butter, brown sugar, and granulated sugar in a medium mixing bowl.
  • Beat in the large egg until fully incorporated.
  • Stir in the buttermilk and vanilla extract until well mixed.
  • Incorporate the flour, baking soda, and salt slowly into the wet mixture until just combined.
  • Fold in the chopped rhubarb gently.
  • Transfer the cake batter to the prepared pan, spreading it evenly.
  • Mix the cinnamon and sugar together in a small bowl and sprinkle over the top of the cake.
  • Bake for 28-32 minutes, until a toothpick inserted comes out clean.
  • Cool the cake on a wire rack for at least 10 minutes before serving.

Notes

Optional: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for extra decadence.
