How to Make Rhubarb Cookies

  • Preheat the oven to 350°F (175°C) and line a cookie sheet with parchment paper or spray it with non-stick cooking spray.
  • In a large mixing bowl, combine the unsalted butter, white sugar, brown sugar, egg, and vanilla extract. Mix until light and fluffy.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and a pinch of salt.
