  • 5 cups fresh rhubarb, cut into 1/2 inch pieces adds delightful tang

  • 1 cup brown sugar adds molasses flavor

Directions

  • In a large bowl, combine the rhubarb with 3 tablespoons of flour and 1 1/2 cups of sugar. Stir well until fully coated, and then pour this mixture into the bottom of a greased 9 x 13 pan.
  • In another bowl, mix together the remaining brown sugar, 1 1/2 cups of flour, and oatmeal. Using a pastry blender, cut in 1 cup of butter until the mixture resembles coarse crumbs.
  • Pour the crunchy topping evenly over the rhubarb filling. Gently pat down the mixture to ensure it adheres.
  • Preheat your oven to 350°F and bake the rhubarb crisp for approximately 45 minutes, until the juices are bubbling and the topping is golden brown.
