How to Make Roasted Carrots

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  • Prepare the carrots by thoroughly washing them—no peeling required! Cut them into 2-inch barrels, halving any thicker pieces vertically for even cooking.
  • Toss the carrots in a large bowl with extra-virgin olive oil, honey (or maple syrup), sea salt, and black pepper until they are fully coated and shimmering with flavor.
  • Spread the coated carrots in a single layer on the prepared baking sheet, ensuring they have space to caramelize beautifully during roasting.
  • Roast for 15 to 25 minutes, keeping an eye on them until they are fork-tender and lightly browned, adjusting the time based on the thickness of the pieces.
  • Season to taste with additional salt and pepper after removing them from the oven, and garnish with chopped fresh parsley to add a pop of color and freshness before serving.
