  • Begin by carefully pitting and stemming 1 pound of fresh sour cherries.
  • In a medium pot, add the pitted cherries, 2 cups of water, and 1 pound of granulated sugar. Set the heat to low and stir gently until the sugar is completely dissolved.
  • Increase the heat and allow the mixture to boil, then reduce the heat to a simmer for about 20 minutes.
  • Remove the softened cherries from the syrup, then increase the heat and boil the syrup until it thickens, about 5 to 10 minutes.
  • Turn off the heat and return the cherries to the pot, allowing them to soak up the syrup.
  • Let the syrup cool down to room temperature, then transfer to a sealed container and store in the refrigerator.

Notes

Best enjoyed within three months for optimal flavor. Can be drizzled over desserts or mixed in cocktails.
