  • 1 lb smoked sausage Conecuh, Andouille, or turkey sausage, sliced
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 2 cans 15 oz white beans (butter beans or navy beans), drained and rinsed
  • 1 can 15 oz diced tomatoes (preferably Rotel)
  • 1 can 15 oz black-eyed peas or field peas, drained
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups fresh turnip greens or collard greens chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning adjust to taste
  • ½ teaspoon black pepper
  • ½ teaspoon salt adjust as needed
  • Optional Add-ins:
  • ½ teaspoon red pepper flakes for extra heat
  • ½ cup corn kernels
  • 1 cup shrimp or crawfish for a seafood version
  • ½ cup okra sliced

Instructions
 

  • Prepare the Ingredients:
  • Brown the sausage in a large pot or Dutch oven over medium heat for 5 minutes, until slightly crispy. Remove and set aside.
  • In the same pot, sauté onion, garlic, and bell pepper in the sausage fat for 3-4 minutes, until softened.
  • Build the Soup Base:
  • Stir in beans, tomatoes, black-eyed peas, broth, greens, and seasonings.
  • Bring to a boil, then reduce heat to low and let it simmer for 30-40 minutes, stirring occasionally.
  • Final Touches:
  • Return the sausage to the pot and let it cook for another 5 minutes.
  • Taste and adjust seasonings, adding more Cajun seasoning or salt if needed.
  • Serve:
  • Ladle into bowls and garnish with fresh parsley or scallions.
  • Serve with crusty bread, cornbread, or over white rice.

Notes

Use smoked sausage for deep flavor, or substitute with turkey sausage for a leaner option.
For a vegetarian version, swap sausage for plant-based protein and use vegetable broth.
