Ingredients
  

For the Dough

  • 6 tablespoons unsalted butter adds richness and a tender crumb

  • 1 bottle yellow cookie icing (Wilton) for outlining cookies
  • 1 set black candy marking pens for adding finishing touches

Instructions
 

Making the Cookies

  • Cream together the butter and sugar in an electric mixer until light and fluffy, about 2-3 minutes.
  • Mix in the egg, Greek yogurt, vanilla extract, and banana extract until smooth.
  • Sift together the ground cinnamon, flour, baking powder, and salt in a separate bowl.
  • Add the flour mixture gradually to the mixer, blending until a smooth dough forms.
  • Turn out the dough onto a piece of parchment paper and shape into a rough ball.
  • Knead softly to make a smooth ball, then roll out the dough to 3/8″ thick.
  • Chill the dough sandwiched between parchment on a baking pan for thirty minutes.
  • While chilling, preheat the oven to 350ºF.
  • Remove the pan of dough from the fridge and place on another baking sheet.
  • Cut the dough into rectangles using a cookie cutter and place on a baking sheet.
  • Bake cookies for 10-14 minutes or until firm and just starting to brown.
  • Cool cookies on the parchment sheet onto a wire rack.
  • If prepping ahead, keep additional cut-out cookies chilled until baking time.
  • When cookies are cool, warm the icing, outline cookies, and let it set.
  • Allow the icing to dry fully before drawing ruler markers with candy pens.
