Ingredients
  

For the Eggs

  • 4 large eggs fresh
  • 1/4 teaspoon salt sea salt recommended
  • 1/4 teaspoon black pepper freshly cracked

For the Vegetables

  • 1 tablespoon vegetable oil olive oil recommended
  • 1 cup tomato diced fresh
  • 1 cup spinach fresh
  • 1 teaspoon garlic powder

For the Cheese

  • 1/2 cup feta cheese crumbled

Steps

  • Start by dicing your fresh tomatoes and measuring out the spinach. In a separate bowl, lightly beat the eggs—being careful not to overdo it, as we want them fluffy.
  • Heat vegetable oil in a skillet over medium heat. Add the diced tomatoes and sauté for about 30 seconds. Then, stir in the spinach and garlic powder, cooking for another 30 seconds until the spinach wilts beautifully.
  • Pour the beaten eggs into the skillet, using a spatula to gently stir and scrape from the bottom. After about 20-30 seconds, add the crumbled feta and fold it in gently.
  • Remove the skillet from heat while the eggs are still creamy. Season your mixture with salt and freshly cracked black pepper to taste.

Notes

Optional: Garnish with fresh herbs like parsley or dill for an extra pop of flavor.
