For the Quesadillas

  • 4 large tortillas gluten-free options available
  • 2 medium ripe avocados should yield slightly under pressure
  • 1 can precooked black beans rinse before use
  • 1 cup corn frozen or fresh
  • 1 small red onion scallions can be used as a substitute

For the Flavor

  • 2 tablespoons lime juice fresh is best
  • 1 clove garlic minced
  • 1 teaspoon cumin or taco seasoning
  • 1/2 teaspoon crushed red pepper adjust to taste
  • to taste fresh cilantro chopped
  • to taste sea salt
  • to taste cracked pepper

For Cooking

  • 2 tablespoons olive oil or cooking spray as an alternative

Steps

  • In a mixing bowl, mash the ripe avocados until smooth. Stir in the minced garlic, fresh lime juice, salt, pepper, and crushed red pepper to taste.
  • Gently fold in the precooked black beans, corn, diced red onion, and chopped cilantro until well combined.
  • Warm a splash of olive oil in a non-stick skillet over medium heat.
  • Spoon half the avocado mixture onto one half of a tortilla, then fold it over like a half-moon.
  • Place each folded quesadilla in the skillet and cook for about 3-4 minutes on each side until golden brown and crispy.
  • Once cooked, remove from skillet and slice into wedges. Serve immediately.

Notes

Garnish with extra cilantro or lime wedges if desired. Experience the flavors paired with salsa or guacamole for a complete meal.
