Instructions

Preparation

  • Whisk together the flour, cornstarch, baking powder, and salt in a medium bowl.
  • Beat the butter and sugar in a large bowl on medium-high speed until creamy, about 3 minutes. Then, blend in the egg and vanilla.
  • Combine ingredients by adding the dry mixture to the wet one. Beat on low speed until just combined. Cover the dough tightly and chill in the refrigerator for 20 minutes to 1 day.
  • Preheat the oven to 350°F (177°C). Grease a 12-inch pizza pan with nonstick spray. Press the chilled dough onto the pan, forming a 9-10 inch circle about 1/3 inch thick.
  • Bake the crust for 17-19 minutes, until the edges are very lightly browned. Cool the crust completely before decorating.
  • Mix the frosting by beating cream cheese and butter together on medium speed until smooth, about 2 minutes. Add confectioners’ sugar and vanilla and beat until creamy.
  • Spread the frosting generously over the cooled cookie crust, then decorate with fresh fruit in a colorful arrangement.
  • Slice and serve your delightful fruit pizza.
