For the Salsa

  • 1 lb tomatoes diced for a juicy base
  • 1 ball pepper (4 oz) bell pepper seeded and finely diced
  • 2 jalapeƱos seeded and finely diced
  • 1 medium onion finely diced
  • 1.5 lbs peaches diced
  • 0.5 bunch cilantro chopped
  • 2 Tbsp lime juice for a zesty twist
  • 0.5 tsp salt or to taste
  • 0.25 tsp freshly ground black pepper or to taste

Preparation

  • Chop tomatoes and transfer them to a large bowl.
  • Finely chop seeded bell pepper and jalapeƱos, then dice the onion and add to the bowl.
  • Dice the peaches and transfer them to the bowl.
  • Add chopped cilantro, lime juice, salt, and black pepper, then fold everything together gently.

Notes

Allow your peach salsa to rest for about 10 minutes before serving to blend the flavors.
