Ingredients
  

For the Cake

  • 1 box white cake mix
  • 3 large egg whites
  • 1 cup water
  • 1/3 cup oil

For the Jell-O Layer

  • 1 pack strawberry Jell-O
  • 1 cup boiling water
  • 1/2 cup cold water

For the Topping

  • 1 container whipped topping
  • 1 cup fresh strawberries for garnish

How to Make Strawberry Poke Cake

  • Preheat your oven to 350°F and line a 9×13-inch pan with aluminum foil, spraying with cooking spray.
  • Mix the cake batter according to package instructions, adding egg whites, water, and oil. Pour into prepared pan and bake for 23 to 28 minutes.
  • Poke holes all over the warm cake using a fork.
  • Combine boiling water and strawberry Jell-O in a measuring cup, whisking until fully dissolved.
  • Add cold water to the dissolved Jell-O, whisking to combine.
  • Pour Jell-O mixture slowly and evenly over the poked cake. Cover and refrigerate for about 3 hours.
  • Spread whipped topping evenly over the chilled cake, cover again, and refrigerate for at least 2 hours or overnight.

Notes

For a pop of color, add a sprig of mint on top before serving.
