Ingredients
  

For the Pie Crust

  • 1 batch Easy Pie Crust Chill for at least 2 hours for flaky texture.

For the Filling

  • 5 oz Fresh Spinach Can use frozen, thawed and drained.
  • 6 large Eggs
  • ½ cup Milk Substitute with heavy cream for a richer texture.
  • 1 cup Feta or Goat Cheese, crumbled For tangy flavor.
  • 1 cup Chopped Green Onions
  • ¼ teaspoon Sea Salt
  • Freshly Ground Black Pepper To taste.

Preparation

  • Prepare the Pie Crust: Roll out pie dough to ⅛-inch thickness, transfer to pie dish, crimp edges, and refrigerate while preheating oven to 425°F.
  • Blind Bake the Crust: Prick the crust, line with parchment and add weights. Bake for 15 minutes, remove weights, and bake another 5-8 minutes until slightly set.
  • Prepare the Filling: Steam spinach, press out excess water. In a bowl, whisk eggs and milk, then stir in spinach, feta, onions, salt, and pepper.
  • Assemble the Quiche: Pour filling into pre-baked crust, smoothing out for even distribution.
  • Bake: Lower oven to 350°F and bake for 40-50 minutes until eggs are just set and top is lightly golden.
  • Cool and Serve: Cool for about 10 minutes before slicing.

Notes

Optional: Garnish with fresh herbs for extra flavor. Ensure spinach is well-drained to prevent a watery filling.
