  • 3 cloves garlic fresh minced for best flavor
  • 2 medium carrots can substitute with celery or bell peppers
  • 1 teaspoon thyme fresh or dried
  • 1 leaf bay leaf

Cooking Instructions

  • Sauté the onions and garlic in a large pot over medium heat until they’re fragrant and translucent, about 3-4 minutes.
  • Brown the ground beef or sausage in the same pot, breaking it apart, and cook until fully browned, about 5-7 minutes.
  • Add diced carrots and shredded cabbage to the pot, stirring well. Cook for another 3-5 minutes until the cabbage starts to wilt.
  • Pour in the vegetable or chicken broth and bring the mixture to a gentle simmer. Season with thyme, bay leaf, salt, and pepper. Let it simmer for 20-25 minutes.
  • Taste the soup and adjust seasoning as needed. Stir in a splash of lemon juice just before serving.

Notes

Optional: Garnish with fresh herbs or a sprinkle of cheese before serving. Leftover soup can be stored in airtight containers for up to 3-4 days.
