Instructions
 

Procedure

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • In a mixing bowl, combine chicken, zucchini, and onion, cutting them into uniform bite-sized pieces.
  • Drizzle olive oil over the mixture, then add garlic, smoked paprika, cumin, oregano, salt, and pepper. Toss to coat evenly.
  • Optional: Sprinkle salt on the zucchini slices, let sit, then pat dry before mixing in if you prefer less moisture.
  • Spread the chicken and vegetable mixture evenly in the prepared baking dish.
  • Bake in the oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and zucchini is tender.
  • Optional: Broil for an additional 2-3 minutes for extra caramelization.
  • Remove from oven, garnish with fresh herbs, and serve over rice.

Notes
