Ingredients
  

  • - 1 tbsp olive oil
  • - 1 medium onion diced
  • - 3 garlic cloves minced
  • - 2 carrots diced
  • - 2 celery stalks diced
  • - 1 lb cooked chicken breast shredded
  • - 4 cups chicken broth
  • - 1 cup frozen peas
  • - 1 cup heavy cream
  • - 1 tsp dried thyme
  • - 1 tsp dried rosemary
  • - Salt and pepper to taste
  • - 1 cup frozen corn
  • - 1 tbsp cornstarch + 1 tbsp cold water
  • - Fresh parsley
  • - Lemon juice

Instructions
 

  • Sauté onion, carrots, and celery in olive oil until softened.
  • Add garlic, thyme, rosemary, salt, and pepper. Sauté 1 minute.
  • Add chicken and broth. Simmer 10 minutes.
  • Add peas and corn. Simmer another 10 minutes.
  • Stir in cream and cook 5–10 minutes.
  • Optional: Thicken with cornstarch slurry.
  • Adjust seasoning, garnish, and serve hot.

Notes

- Add lemon or cheese for extra brightness
- Use rotisserie chicken for quick prep
- Freeze for up to 3 months
