  • 9 medium Potatoes peeled and cut into 1/2-inch cubes; use Russet or Yukon Gold for creaminess

For the Broth

  • 4 cups Chicken Stock try Swanson for balanced flavor
  • Salt essential for flavor enhancement
  • Pepper essential for flavor enhancement

For the Creaminess

  • 3 tbsp Butter Kerrygold is preferred for quality
  • 1/4 cup Flour essential for thickening the soup
  • 1 cup Cream heavy cream for best results

For Extra Flavor

  • 1 tsp Tarragon adds subtle sweetness
  • 3 tsp Cilantro can be omitted if desired

Cooking Instructions

  • In a large pot, cook bacon pieces over medium heat for 8-10 minutes until crispy. Remove the bacon and set aside, leaving 1/4 cup of the bacon fat in the pot.
  • Add the diced celery and onion to the bacon fat and sauté for 5 minutes, until softened and fragrant.
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  • Toss in the cubed potatoes, stirring for 2-3 minutes to coat them with the bacon fat.
  • Return the crispy bacon to the pot, then add chicken stock to cover the potatoes. Bring the mixture to a gentle boil.
  • Reduce heat and let the soup simmer for 15-20 minutes, or until the potatoes are fork-tender.
  • In a separate skillet, melt butter and whisk in flour to create a roux. Gradually stir in the cream while simmering for 4-5 minutes until thickened.
  • Pour the cream mixture into the pot of potatoes while stirring to combine.
  • Using an immersion blender, blend half of the soup until creamy, leaving some chunks for texture.
  • Adjust seasoning with salt and pepper as needed. Serve hot, and enjoy!
