  • 2 cups rolled oats avoid quick oats for best texture
  • 1 cup natural peanut butter use smooth for easier mixing
  • 1/2 cup honey adjust based on sweetness preference
  • 1 teaspoon vanilla extract optional but recommended

For the Topping

  • 1 cup chocolate chips choose high-quality chips
  • 2 tablespoons coconut oil can be swapped with another neutral oil

Instructions
 

Making the Oat Cups

  • In a medium bowl, combine rolled oats, honey, peanut butter, and vanilla extract. Stir until everything is well blended.
  • Spray a muffin tin with nonstick cooking spray.
  • Divide the oat mixture evenly into the muffin cups, pressing down firmly.
  • In a small bowl, melt chocolate chips and coconut oil in the microwave until smooth.
  • Spoon the melted chocolate over each oat cup and spread it evenly.
  • Place the muffin tin in the freezer and let it sit for about an hour.
  • Once hardened, gently pop the cups out of the tin and serve or store in an airtight container.
