Ingredients
  

  • 🥣 3 cups old-fashioned rolled oats
  • 🌰 1 cup mixed raw nuts such as almonds, pecans, walnuts
  • 🥥 ½ cup unsweetened shredded coconut optional
  • 🍯 ½ cup honey or pure maple syrup
  • 🥥 ¼ cup melted coconut oil
  • 🍦 2 teaspoons pure vanilla extract
  • 🌿 1 teaspoon ground cinnamon
  • 🧂 ½ teaspoon sea salt

Instructions
 

  • Preheat Oven: Heat oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  • Combine Dry Ingredients: In a large mixing bowl, mix rolled oats, mixed nuts, shredded coconut (if using), ground cinnamon, and sea salt.
  • Prepare Wet Mixture: In another bowl, whisk together honey or maple syrup, melted coconut oil, and pure vanilla extract.
  • Mix Together: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  • Bake: Spread the mixture evenly on the prepared baking sheet. Bake for 21 to 24 minutes, stirring once halfway through, until the granola is golden brown.
  • Cool: Allow the granola to cool completely on the baking sheet; it will become crisp as it cools.
  • Store: Once cooled, store the granola in an airtight container at room temperature for 1 to 2 weeks or in the freezer for up to 3 months.
