Ingredients
  

For the Salad

  • 3 oranges a colorful mix of navel, blood, and Cara Cara oranges adds sweetness and acidity
  • 1 medium fennel bulb choose for its unique anise flavor
  • 4 cups baby greens soft lettuce like arugula or spinach
  • 1/2 small red onion thinly sliced
  • 1/2 cup pistachios salted, roasted varieties

For the Dressing

  • 1/2 cup orange juice freshly squeezed
  • 1/4 cup olive oil
  • 1 tablespoon honey to enhance sweetness
  • 1 teaspoon Dijon mustard for emulsification
  • to taste salt and pepper for seasoning

Instructions
 

Preparation

  • Peel the oranges by cutting off the top and bottom, then slice off the skin and pith. Cut them into thin rounds and reserve any juice.
  • Prepare the fennel by trimming the root end. Thinly slice the bulb into crescent-shaped strips.
  • Layer the baby greens in a large serving bowl, followed by orange slices, fennel slices, and red onion.
  • Sprinkle chopped pistachios on top for added crunch.
  • Combine all dressing ingredients in a jar, shake well, and season to taste.
  • Dress the salad just before serving by pouring the vinaigrette over it and tossing gently.
