For the Chicken Marinade

  • 1 pound Chicken Drumsticks skin removed; opt for boneless for quicker cooking
  • 1 pound Boneless Skinless Chicken Thighs cut in half; adds moisture
  • 2-3 teaspoons Biryani Masala homemade versions are recommended
  • 1 tablespoon Ginger Paste or fresh ginger for stronger flavor
  • 1 tablespoon Garlic Paste or crush fresh garlic
  • 2 teaspoons Kosher Salt adjust to your taste preference
  • 1 tablespoon Kashmiri Red Chili Powder substitute with paprika for less spice
  • 0.5 teaspoon Ground Turmeric provides color and earthy flavor
  • 0.25 cup Fresh Mint Leaves chopped; or substitute with cilantro
  • 2 tablespoons Lemon Juice enhances flavor and tenderizes meat
  • 0.75 cup Plain Yogurt can use dairy-free yogurt

For the Cooking Process

Cooking Steps

  • In a large bowl, combine yogurt, ginger paste, garlic paste, turmeric, red chili powder, biryani masala, salt, mint, and lemon juice. Coat the chicken pieces thoroughly, then refrigerate for at least 30 minutes to deepen the flavors.
  • Rinse the basmati rice under cold water 2-3 times until the water runs clear. Soak in water for 20 minutes to enhance the texture, then drain well.
  • Heat the ghee in a pan over medium heat. Add the thinly sliced onions and sauté until they turn golden brown and crispy, about 15-20 minutes. Reserve a few for garnishing later.
  • Bring a large pot of water to a boil with bay leaves, cardamom, cloves, and star anise. Add the soaked basmati rice and cook until it's about 90% done (around 5-6 minutes). Drain the rice, being careful not to break the grains.
  • In the same pan with the remaining ghee, sauté the marinated chicken over medium heat for about 8-10 minutes until browned and fragrant.
  • Carefully layer the parboiled rice over the cooked chicken. Sprinkle the reserved fried onions on top, and drizzle with saffron-infused milk for a touch of luxury.
  • Cover the pot tightly with a lid to trap the steam and cook on low heat for 20 minutes. Afterward, allow it to rest for an additional 10 minutes before opening.
  • Fluff the rice gently with a fork to mix, then garnish with chopped cilantro. Serve your chicken biryani piping hot with raita and lemon wedges.
