Ingredients
  

  • - 4 large yellow onions thinly sliced
  • - 2 tbsp unsalted butter
  • - 1 tbsp olive oil
  • - 2 cloves garlic minced
  • - 1 tsp sugar
  • - 6 cups beef broth * or vegetable broth*
  • - 1 tsp Worcestershire sauce * or vegetarian*
  • - 1 tsp salt
  • - ½ tsp ground black pepper
  • - ½ tsp dried thyme
  • - 1 bay leaf
  • - 1 French baguette sliced ½-inch thick
  • - 1½ cups shredded Gruyère cheese

Instructions
 

  • Heat butter and oil over medium-low. Add onions and cook 10 minutes. Add sugar and a pinch of salt. Continue cooking 30–40 minutes until golden brown.
  • Stir in garlic, cook 1 minute. Add Worcestershire, broth, thyme, pepper, salt, and bay leaf. Simmer 20–25 minutes.
  • Toast baguette slices at 375°F for 8–10 minutes.
  • Ladle soup into broiler-safe bowls. Top with baguette and cheese. Broil 3–5 minutes until bubbly.
  • Let cool slightly. Serve warm and enjoy!
