Preparation Steps

  • Begin by finely dicing the celery and tomatoes. Slice the green onions, grate the carrot, chop the spinach, and zest and juice the lemon.
  • In a large bowl, combine the yogurt, mayonnaise, and Dijon mustard. Stir until smooth, then add the lemon juice, dill, pepper, and Parmesan.
  • Gently fold in the shredded chicken and all your prepared veggies until everything is evenly coated.
  • Heat the tortillas in a skillet for 20-30 seconds or microwave for 15-20 seconds.
  • Spoon 1 to 1.5 cups of the chicken salad mixture slightly off-center on each tortilla. Fold in the sides and roll tightly.
