Ingredients
  

For the Wrappers

  • 12 sheets spring roll rice wrappers essential for wrapping up all your delicious ingredients!

For the Filling

  • 6 oz vermicelli rice noodles cook just until tender
  • 2 medium mangos use ripe, sweet ones for a fresh burst of flavor
  • 1 medium carrot shred or slice into strips
  • 1 medium English cucumber slice thin for ease of rolling
  • 12 pieces cooked shrimp substitutable with cooked chicken
  • 1 cup fresh mint leaves
  • 1 cup fresh basil leaves
  • 1 cup fresh cilantro

For the Dipping Sauce

  • 1/4 cup sweet chili sauce
  • 2 tbsp peanut butter smooth or crunchy
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp hoisin sauce

How to Make Fresh Spring Rolls

  • Bring a pot of water to a boil and cook the vermicelli noodles for just a few minutes according to the package instructions. Drain and rinse them under cold water to stop the cooking process.
  • Collect all your delicious toppings—chopped veggies, fresh herbs, and cooked shrimp—on a large cutting board or plate.
  • Pour about 1 inch of warm water into a large, deep dish or pie pan. Immerse one rice wrapper into the water, letting it soak for just 10-15 seconds until soft.
  • On the bottom third of the spring roll wrapper, layer 1-2 slices of your prepared veggies, a few shrimp, a pinch of vermicelli noodles, and a couple of leaves from each herb.
  • Tuck the sides of the spring roll in tightly over the fillings. Start rolling from the bottom edge closest to you, just like wrapping a burrito.
  • In a food processor or blender, combine the sweet chili sauce, peanut butter, low-sodium soy sauce, and hoisin sauce. Pulse until smooth and creamy.

Notes

Store fresh spring rolls in an airtight container in the fridge for up to 3 days. Serve with extra fresh herbs on the side for garnish!
