Ingredients
  

For the Rolls

  • 4 oz Vermicelli Rice Noodles Any thin rice noodles can be a substitute.
  • 8 oz Shrimp For vegetarian, use tofu or extra vegetables.
  • 8 pieces Spring Roll Wrappers Ensure they are rice wrappers.
  • 1 cup Shredded Carrots Substitute with bell peppers if desired.
  • 8 leaves Butter Lettuce Leaves Romaine can also be used.
  • 1 cup Persian Cucumbers Any crunchy cucumber variety works.
  • 1 cup Fresh Herb Leaves (Cilantro, Mint, Basil) Adjust herb ratios to taste.

For the Dipping Sauces

  • 1/2 cup Peanut Butter Almond or sunflower seed butter for allergy-friendly.
  • 2 tbsp Brown Sugar Can use honey as a substitute.
  • 2 tbsp Soy Sauce Use tamari for gluten-free.
  • 2 tbsp Seasoned Rice Vinegar
  • 1 tbsp Toasted Sesame Oil
  • 1 tbsp Chili Garlic Sauce
  • 1 tbsp Ground Ginger
  • 1 tbsp Granulated Sugar Omit or decrease to taste.
  • 1 tbsp Fish Sauce Optional for flavor.
  • 1 each Lime Juice Fresh lime recommended.

How to Make Fresh Spring Rolls

  • Boil water in a pot and add the vermicelli rice noodles, cooking according to package instructions. Drain and let them cool, ensuring they're tender but not overcooked.
  • Slice the shrimp in half lengthwise for easy rolling. If opting for tofu or extra veggies, prepare them accordingly.
  • Fill a shallow dish with warm water. Dip one spring roll wrapper at a time for about 8-10 seconds until pliable.
  • Place the softened wrapper on a clean surface. Start with a lettuce leaf, then add noodles, shredded carrots, cucumbers, herbs, and shrimp. Roll tightly from the bottom, folding in sides.
  • In a bowl, whisk together the peanut butter, brown sugar, soy sauce, lime juice, seasoned rice vinegar, toasted sesame oil, chili garlic sauce, and ground ginger until smooth.
  • Enjoy your fresh spring rolls immediately with the creamy peanut sauce and sweet chili sauce.
