How to Make Strawberry Pie

  • Bake the pie crust according to the package instructions, letting it cool completely before preparing the filling.
  • Slice the strawberries in half. Reserve half of the strawberries in a large bowl.
  • Combine the remaining strawberries in a medium saucepan with sugar, 1/4 cup of water, and lemon juice. Stir well and mash lightly with a fork until chunky, then heat over medium until boiling.
  • Thicken the mixture by reducing heat to medium-low. In a small bowl, dissolve cornstarch in the remaining 1/4 cup of water, then stir it into the pot. Simmer for about 5 minutes until translucent and thickened, then cool for 10 minutes.
  • Mix the filling with the reserved strawberries in the bowl, then pour this filling into your baked crust.
  • Chill the pie uncovered for at least 3 hours or until set. Serve it with a generous dollop of whipped cream.

Notes

Optional: Garnish with a sprig of mint for a delightful pop of color. Leftovers can be stored in the fridge or frozen for later enjoyment.
