Ingredients
  

  • **Sugar Cookie Crust:**
  • - ¾ cup sugar
  • - 1¼ cups flour
  • - ¼ tsp baking powder
  • - ¼ tsp salt
  • - ½ cup butter softened
  • - 1 large egg
  • - 1 tsp vanilla extract
  • **Cream Cheese Frosting:**
  • - 12 oz cream cheese softened
  • - ¼ cup unsalted butter softened
  • - 1 tsp vanilla
  • - 1¼ cups powdered sugar
  • **Fruit Toppings flexible:**
  • - Strawberries sliced
  • - Kiwis peeled and sliced
  • - Mango thinly sliced
  • - Blueberries
  • - Grapes halved

Instructions
 

  • Mix butter, sugar, egg, and vanilla. Add dry ingredients and mix. Chill 30 min.
  • Roll dough onto parchment-lined pan. Bake at 350°F for 20–25 min. Cool completely.
  • Beat frosting ingredients until smooth. Spread on cooled crust.
  • Arrange fruit in a circular or rainbow pattern. Chill 30 min before serving.

Notes

- Store-bought dough works fine
- Gluten-free flour works 1:1
- Use fruit that’s not overly wet or overripe
