For the Nachos

How to Make Fully Loaded Ground Beef Nachos

  • In a large skillet, heat light olive oil over medium-high heat. Add chopped red onion and minced garlic, sautéing until fragrant and softened. Add in the ground beef along with sea salt, paprika, chili powder, and black pepper; cook until the beef is no longer pink, about 8-10 minutes.
  • Wipe the skillet clean and lower the heat. Add butter and a drizzle of olive oil, followed by minced garlic and fresh corn. Sauté for around 5 minutes, until the corn is charred and tender.
  • While the corn is roasting, grate the cheddar cheese. Slice the jalapeños, chop the cherry tomatoes, and finely dice the cilantro to have everything ready for assembly.
  • Preheat your oven to 400°F (200°C). On a large parchment-lined sheet pan, layer the tortilla chips, followed by the cooked beef, roasted corn, and cheddar cheese. Feel free to repeat the layers for more indulgence!
  • Place the sheet pan in the oven and bake for about 6-8 minutes, or until the cheese is fully melted and bubbly. Keep an eye on it to prevent burning.
  • Remove the nachos from the oven and top with sliced jalapeños, chopped cherry tomatoes, fresh cilantro, and a good dollop of sour cream for that perfect finish. Serve immediately and enjoy!

Notes
