For the Crust

  • 1/2 box Funfetti Cake Mix Use any funfetti mix available
  • 2 large Eggs Use room temperature eggs

For the Cheesecake Filling

  • 16 oz Cream Cheese Ensure it is softened
  • 3/4 cup Sugar Granulated sugar works best
  • 1 cup Sour Cream Can substitute with Greek yogurt
  • 1 tsp Vanilla Extract Use pure vanilla extract
  • 1 pinch Salt Essential for balancing sweetness

For the Topping

  • 1/4 cup Rainbow Sprinkles Add for serving
  • 1 cup Vanilla Frosting Store-bought or homemade

Steps

  • Preheat your oven to 350°F (175°C) and grease a springform pan. Mix half of the funfetti cake mix according to the package directions and pour it into the prepared pan. Bake for 15-20 minutes until lightly golden, then allow it to cool completely.
  • In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the room temperature eggs one at a time, mixing thoroughly after each addition. Then, mix in the sour cream, vanilla extract, and a pinch of salt until well combined.
  • Pour the cheesecake mixture over the cooled funfetti cake crust in the springform pan, spreading it evenly.
  • Place the springform pan in a water bath and bake for about 60-70 minutes. The cheesecake should be set with a slightly jiggly center.
  • After baking, turn off the oven and leave the cheesecake inside with the door ajar. Once cooled, refrigerate for at least 7 hours or overnight.
  • Before serving, top with vanilla frosting and rainbow sprinkles.

Notes

For an extra treat, drizzle chocolate sauce over each slice before serving. Ensure all ingredients are at room temperature for best results.
