Making Gingerbread Cookies

  • Begin by beating softened butter, brown sugar, and molasses together for about 2 minutes until fluffy and well combined. Add the egg and vanilla, mixing just until smooth.
  • In a separate bowl, whisk together the all-purpose flour, ground spices, and optional ingredients like fresh ginger, orange zest, and black pepper.
  • Gradually incorporate the dry mix into your wet ingredients using low speed on your mixer. Mix just until a cohesive dough forms.
  • Divide your dough into two halves, forming them into discs. Wrap each disc in plastic wrap and refrigerate until firm, ideally for 2-3 hours.
  • Preheat your oven to 350°F (175°C). Roll out one chilled disc to about 1/4” thickness between two sheets of parchment paper.
  • Arrange the cut-out cookies onto a parchment-lined baking sheet. Bake for 9-10 minutes until they puff slightly, then cool them on the sheets for 5 minutes before transferring to a wire rack.
  • Once the cookies are completely cooled, decorate them with icing and festive sprinkles.

Notes

Customize spices according to your taste. Store baked cookies in an airtight container and freeze unbaked shapes for longer storage.
