Ingredients
  

For the Glaze

  • 1 cup Powdered sugar
  • 2 tablespoons Fresh lemon juice Adjust for desired consistency

For the Lemon Loaf

  • 1 cup All-purpose flour
  • 1 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Unsalted butter Softened
  • 1 tablespoon Zest of lemon Freshly grated
  • 1/4 cup Fresh lemon juice The fresher the juice, the brighter the flavor

Instructions
 

Lemon Loaf Preparation

  • Preheat your oven to 350°F (175°C).
  • Mix the dry ingredients (flour, sugar, baking powder, and salt) in a large bowl until well combined.
  • Cream the softened unsalted butter and granulated sugar until light and fluffy.
  • Incorporate the eggs, one at a time, mixing until fully blended.
  • Add the fresh lemon zest and juice into the batter, mixing well.
  • Combine the dry ingredients with the wet ingredients, folding gently until just combined.
  • Pour the batter into a greased loaf pan and smooth the top.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Glaze Preparation

  • Whisk together the powdered sugar and lemon juice in a medium bowl until smooth.
  • Drizzle the glaze over the cooled lemon loaf.

Notes

Optional: Garnish with extra lemon zest on top for an added pop of color and flavor.
