Ingredients
  

For the Flatbread

  • 1 cup Cottage Cheese Blend for a smoother texture.
  • 2 large Eggs Use room temperature.
  • 1 teaspoon Garlic Powder Can substitute with fresh minced garlic.
  • 1 teaspoon Onion Powder Onion salt is a good alternative.
  • 2 teaspoons Italian Seasoning McCormick preferred but fresh herbs work too.
  • 1/2 cup Asiago Cheese Can substitute with mozzarella or parmesan.
  • to taste Black Pepper Adjust based on preference.

Preparation

  • Combine cottage cheese, eggs, garlic powder, onion powder, Italian seasoning, and black pepper in a blender. Blend on medium-high for 60-90 seconds until smooth and lump-free.
  • Cut a piece of parchment paper to fit the fryer basket and lightly spray with cooking spray.
  • Pour the blended mixture onto the parchment, spreading it evenly to about 1/4-inch thick.
  • Place the parchment in the air fryer and cook at 320°F for 12-15 minutes until the edges are golden brown.
  • Carefully remove from the fryer, sprinkle with Asiago cheese, and return to the fryer for an additional 2-3 minutes until the cheese is melty.
  • Let the flatbread cool on the parchment for 5 minutes before slicing or tearing.

Notes

Top with fresh herbs or drizzle with olive oil for added flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
