Preparation Steps

  • Cut the waxy potatoes into even chunks. In a large pot, bring heavily salted water to a boil. Add the potatoes and boil for 10–12 minutes until they are just fork-tender. Drain and spread them on a tray to cool completely.
  • In a large mixing bowl, whisk together the mayonnaise, mustard, vinegar or lemon juice, pickle juice, diced red onion, chopped pickles, and sliced scallions. Give it a taste and adjust the seasoning as needed for a perfect balance.
  • Once the potatoes are completely cooled, add them to the bowl with the dressing. Using a spatula, gently fold everything together, being careful not to mash the potatoes. Let it sit for 10–15 minutes to allow the flavors to meld beautifully.
  • Season the salad with kosher salt and pepper to taste. Just before serving, top with chopped chives and a dusting of paprika for that beautiful pop of color. This salad can be enjoyed chilled or at room temperature; it’s truly versatile!
