For the Potatoes

  • 2 lbs waxy potatoes Choose for creamy texture

For the Dressing

  • ¾ cup mayonnaise Adds creaminess

  • 2 tbsp vinegar or lemon juice For brightness and tang
  • 2 tsp pickle juice Adds extra zing

  • ¼ cup cornichons or dill pickles Chopped for a sour burst

For the Seasoning

Instructions
 

Preparation

  • Begin by chopping the 2 lbs of waxy potatoes into even chunks.
  • Bring a large pot of heavily salted water to a boil. Carefully add the potato chunks and boil them for 10–12 minutes until they are just fork-tender.
  • In a large mixing bowl, whisk together ¾ cup of mayonnaise, 2 tbsp of mustard, 2 tbsp of vinegar or lemon juice, along with 2 tsp of pickle juice, finely diced red onion, chopped cornichons or dill pickles, and sliced scallions.
  • Once the potatoes are completely cool, gently fold them into the dressing with a spatula.
  • Season with kosher salt and pepper to taste. Top your salad with chopped chives and a dusting of paprika before serving.

Notes

For optimal flavor, allow the salad to sit at room temperature for 15 minutes before serving.
