Instructions

How to Make Grilled California Avocado Chicken

  • Marinate the Chicken: In a large bowl, mix together the chicken breasts, minced garlic, balsamic vinegar, olive oil, and Italian seasoning. Ensure each piece of chicken is coated well, cover the bowl, and refrigerate for at least 30 minutes or up to 24 hours for deeper flavor.
  • Prepare the Salsa: While the chicken marinates, cut ripe avocados into cubes and halve the tomatoes. In a separate bowl, combine avocado, tomatoes, chopped basil, a squeeze of fresh lemon juice, and a drizzle of olive oil. Gently toss to combine, season with salt and pepper, and keep covered to maintain freshness.
  • Grill the Chicken: Heat your grill pan or skillet over medium-high heat. Place the marinated chicken on the grill, cooking for approximately 8-10 minutes on each side until the meat is fully cooked. In the last minute of grilling, top each piece of chicken with fresh mozzarella slices, allowing them to melt.
  • Serve: Transfer the grilled chicken to a plate, generously spoon the avocado tomato salsa over the top, and dig in while it's still warm for a delightful experience.
